How to Cook Chicken Paprikash
Today, I show you how to cook one of the most popular Hungarian foods Chicken Paprikash or Csirke Paprikás. This is a typical dish in Hungary and fairly easy to make.
INGREDIENTS:
-chicken thighs
-cooking fat (oil)
-1 tomato
-1 pepper
-1 onion
-2 garlic cloves
-salt & pepper
-parsley & summer savoury
-sour cream
-600g flour
-400ml water
-3 eggs
DIRECTIONS:
-make 250ml of chicken stock
-cook the tomato in the stock
-season the chicken with salt & pepper
-finely chop onion & garlic
-start frying chicken in pan with the fat/oil
-remove tomato from broth, peel and chop
-chop pepper
-when chicken is brown on both sides, remove chicken from pan
-fry onion and garlic in the same pan until caramelized
-add chopped peper & tomato to pan and cook until liquid evaporates
-add stock and cook until liquid evaporates
-add more stock and simmer on low heat
-add paprika powder
-add more stock
-add back chicken
-add summer savory
-cook for 20 mins more covered
-thicken sauce with stock/water, flour and sour cream
FRESH PASTA (GALUSHKA):
-in a bowl mix together 600g of flour, 400ml of water, 3 eggs, 2 tbsp oil, -pinch of salt
-let it rest for 5 mins after mixed
-boil water in a pot
-use a galushka grater or cheese grater topush the pasta mix through the holes into the boiling water
-when pasta has risen to the top, let cook another 2 mins
-remove pasta from the water, drain well, and add oil
Now plate and eat!
This is my way of making this delicious meal and hopefully you'll be able to try this for yourself now also.

    I would have liked to see more of the Jewish Quarter but this video was all about the guide with only occasional quick shots of the Jewish Quarter.

    Poland, Czechoslovakia, Hungary, Romania and the Basic sisters were fascist protectorates by Nazi Germany working all together to destroy the USSR. Those countries deserved to be occupied and showed no remorse by the Red Army for being collaborators to the Nazi war machine which mind you started the Holocaust and murdered 6 million Jews. Lebensraum; If Operation Barbarossa succeed 60+ million people would have been wiped out.

      Ha ha....and finally I found you. Let's educate the world about how the palinka actually evolved. I read that Cognac was made using really bad wine that they distilled into what would become bad cognac.....nowadays it is not bad....but was somewhat beaten by its Eastern cousin.. the palinka.       @@ThatLeviGuy I was referring to the Jewish communities that were in the land we know know as Hungary before the Magyars arrived. My point is that the Jews were there long the Middle Ages. I'm not trying to negate the Magyars, just pointing out a tiny factoid that manny people people are unaware of. Blaybn gezunt :)

    This is a bit off topic- but I am just wondering... My uncle did an extensive ancestry search online and posted it on genie. He passed away and there are no other family members from whom I can get information. My mother was from Budapest, Dunabogdany specifically. There are last names of Frenkel, Lehotzky, and first names of Zsigmond and Samuel among my great and great-great grandparents. My mother and uncle denied Jewish heritage, but I am really wondering! They were born in 1926 and 1930 respectively, so I wonder if they converted or hid their heritage because of the political times. Incidentally, my last name is from my Spanish husband. My mother's maiden name was Ujhelyi, my grandmother's, Edenburg, and then the last names Frenkel and Lehotzky appear among my great and great-great grandparents. Also the male first names of Zsigmond and Samuel. I will be doing a DNA test soon, but was wondering if there is such a thing as exclusive Jewish names in relation to country and time period. This would have been in the 1800's

      Frenkel is pretty typical Jewish name. Edenburg could be German. Samuel, Zsigmond maybe. Ujhelyi seems like a newly minted Hungarian name. Likely they had a German name before. Lehotzky is Slavic but can be anything. I think most Jews had German names, only a few Hebrew like Kohn, Spiro or Loewy. Then many changed it to Hungarian names. So under a Hungarian or German sounding name you can find almost anybody, Hungarian, German, Jew, anybody. With the exception of echte Jewish names, not much could I guess. We are pretty mixed up here. I am no expert though. Check the net or archives.

    Horn Gyula was a stinking pufajkás bastard. Groups of armed marauding communists called pufajkás (Pufajka is a Russian military winter jacket) went around the countryside rounding up revolutionaries and shooting them on the spot according to military court sentencing.

      penguins inadiorama the Hungarians evolved in Central Asia and brutalized their way into Europe. Humanity in general evolved originally in Africa. The Jews have made an outsized contribution to Hungary - economically and culturally, for hundreds of years. Don’t whine and blame them for your current predicament. Your jealousy is showing.

      Most people do not know that the Jews were in Hungary before there even was a Hungary and way before the Magyars arrived. You are right, Jews were hardly "immigrants".

    From political analysis to cooking program? You certainly can do both, but PLEASE! give us foreigners a better understanding of Hungary and not just an introduction into its famous cuisine. I watched all your videos because as a tourist I will come to one of your Swing concerts. Even though I felt a little buried under all the information, I'm convinced that you really could do a good job by explaining Hungary to the rest of the European family. So don't give up!
